SMOKED PRODUCTS


Summer Sausages

We process venison in Original, Maple and
Cheddar summer sausage. We add 20% pork.
The sausage will be packaged into approximately
1 lb vacuum sealed packages. We charge the following for green weight, 12 lb minimum* per flavor.

• Original:$3.00 lb
• Maple: $3.89 lb
• Cheddar: $3.59 lb


Hotdogs

We process venison into a skinless hotdog.  We mix with 100% pork with a 50/50 ratio. The hotdogs will be packaged into approximately 1 lb. vacuum sealed packages. We charge the following for green weight with a 8 lb. minimum per flavor.

• Original Hotdogs:$2.99 lb
• Jalapeno & Cheddar Cheese: $3.59 lb
• Cheddar: $3.49 lb


Old Fashioned Bologna

We mix bologna with 100% pork with a 50/50 ratio. Offered in Ring or 8″ Deli Style.
We charge the following for green weight and there is a 8 lb. min per product.

• Ring Bologna / Bologna:$3.09 lb
• Bologna & Cheese: $3.59 lb


Smoked Kielbasa & Cheddar

We process venison into smoked kielbasa using an all-natural casing. The product is also mixed with 100% pork with a 50/50 ratio. The product will be packaged and vacuum sealed into approximately 1 lb. packages. We charge for the green weight and there is a 8 lb. minimum per product.

• Kielbasa:$3.19 lb
•Cheddar Kielbasa: $3.69 lb
• Jalapeno & Cheddar Kielbasa: $3.79 lb


Venison Smoked Snack Sticks

Smoked in the smokehouse with a casing.
There is a 13 lb. minimum per flavor. (green weight)

The quality of the venison is directly proportional to the
leanness of the venison used. For a better flavor it should not be too lean. We add 20% pork trimmings to the product.

• Original, Bbq, Teriyaki, Tex Mex, Man Up, Maple &       Pepperoni:$3.49 lb
•Pepperoni & Cheese: $4.19 lb
•Maple Snack Sticks: $4.29 lb


Old Fashioned Venison Jerky

(Whole Muscle or Ground)
This is a sliced or ground and dried product. The quality of the jerky is directly proportional to the leanness of the venison used to produce the jerky.

We charge $4.50 per pound for sliced jerky (green weight),
ground jerky $4.00 lb. and you may expect an approximate
yield of 40%.

There is an 8 lb. minimum per flavor and the
flavors are: Tex Mex (hot), Man Up (super hot), BBQ,
Original, Peppered, Teriyaki, and Mildly Maple.
The Mildly Maple is $.80 cents more per pound.


VENISON FRESH SAUSAGE


We process venison into Maple, Breakfast, Chorizo, Bratwurst, Cheddar Bratwurst, Peppers & Onions, Sweet Italian, and Hot Italian sausage.

We add 20% pork. The sausage will be packaged into approximately 1 lb. vacuum sealed packages.

We charge $2.50 lb for cased sausage and $1.30 for 1 lb bulk sausage. There is a 14 lb. min. for cased sausage and 10 lb. min. bulk sausage.

Maple and Peppers & Onions are $0.80 cents more a pound.
Cheddar Bratwurst and Crazy Cranberry are $1.20 more per pound.

Added pork is $3.00 per pound (in addition to price).

CASH OR CHECK PAYMENT ONLY
We don’t merge meat. We charge on green weight plus added pork, etc.
Green weight is your meat plus pork, and cheese, peppers, onions if added.

For fresh bulk and cased sausage we charge the stated price for the total weight including pork, and cheese, peppers, and onions if added plus we add the price of the pork at $3.00 lb. All other products are calculated based on the green weight method.

Wild Game Processing:
DEER
$85.00 boneless cut and skin.
$75.00 bone-in cut and skin.
(*$75.00 cut and skin if being made into 50% specialty products.)

BEAR
$110.00 boneless cut and skin.
$100.00 bone-in cut and skin.
(*Head Mount Caping $5.00 additional.)
(*Full Mount Caping $10 additional.)
(*European Mount $50a additional, includes boiled, bleached and glazed.)

BEEF
Customer slaughters brought to us: (We Skin/Gut) $40.00
We slaughter on customers site: $70.00 within 10 miles.
Cutting 0.70 lb. includes vacuum sealing.

PIGS
Customer slaughters brought us: (We Skin/Gut) $25.00
Customer brings pig to us to slaughter & skin: $35.00
We slaughter on customers site: $50.00 within 10 miles.

Cutting 0.70 lb. includes 30 lbs. of bulk sausage. Choices are Hot Italian, Sweet Italian, Breakfast, Chorizo, French Canjun.

Additional Flavors are Maple Breakfast, Peppers & Onions
($.80 more a lb.)

Crazy Cranberry, Cheddar Bratwurst, and Parsley & Cheese
($1.25 more a lb.)
(Links are $.75 lb.)

Smoking is $1.25 lb starting weight. (Our Brine is new and never re-used) This includes product to be vacuum sealed as whole piece that it was smoked at.

If you want meat sliced, or cut and individually vacuum sealed it’s an additional $0.80 lb.
Cut or sliced is $0.60 lb. Grinding is also $0.60 lb. packaged bulk or $0.80 lb. ground and packaged individually.)

We take meat in from 6 am until 8 pm, Monday through Friday and Saturday 7 am until 8 pm and Sunday 9 am until 6 pm.

We will charge storage fee of $5.00 per day (7 days from when we call you after your order is completed)
All products vacuum sealed!
